Curcumin is a vegetable dye from which the yellow color is obtained, this is found in the plant called turmeric traditionally used as a spice, being the main ingredient of the well known curry powder. It is obtained by dissecting and grinding the turmeric rhizomes.
This pigment obtained is insoluble in water and partially soluble in alcohol, but it is possible to prepare it in different ways according to the applications it will receive so that the final product can be water or fat soluble. The most common applications are in foods such as yoghurt, ice cream and other dairy products, cereals, pastries and cakes, as well as colorants in mustards, soup preparations and in some pickles and meat products.
This natural colorant varies in its tonality according to the pH, in an acid medium it has a lemon yellow tone, while increasing the pH it acquires a greenish tonality, while in an alkaline medium it acquires an orange color. It is stable to temperature, but very sensitive to light.
