We eat with our eyes. And, as consumers increasingly seek minimally processed foods, the presence of whole food ingredients for appearance, taste and even nutrition adds value and differentiates them in the crowded meat and poultry market.

Inclusions must be authentic and real. This allows for a short list of ingredients. Dry formats, especially fruits, vegetables and herbs, are often the best choice to avoid color problems or moisture migration into formed meat products, such as sausages, patties and meatballs.

At IMBAREX, we use cochineal carmine to give the best possible color to sausages so that they are completely natural.
